Measurements are rough approximations. I buy in bulk & eyeball ammounts.
OLIVE SPREAD
1 (8 oz.) jar olives [Black olives will look strange but taste just as good]
1 (8 oz.) package cream cheese DON'T SKIMP!! USE THE GOOD STUFF or IT WON'T TASTE AS GOOD!
1 cup chopped pecans (approximately) OTHER TYPES OF NUTS WILL MAKE THIS TASTE FUNKY
chop pecans in food processor
add cream cheese cut into cubes
add olives, & just a splash of juice from olive jar.
Pulse together into a loose spread.
[if too thick, add more olive juice, if too thin add more cream cheese, olives &/or nuts.]
refrigerate overnight to thicken If you make a large ammount & portion it into smaller containers, it will last from Thanksgiving through New Years
spread on rye, pumpernickel, mini-bagels, or sourdough.
My family has been using this recipe for over 30 years, and we don't keep making stuff that we don't like.
